Ingredients
- 1 tablespoon of Mr Vikki’s North Indian Curry paste or Hot Goan Curry paste
- 350 g red lentils
- 2-3 shallots, finely chopped
- 1 litre vegetable stock

Heat a lug of olive oil or lump of butter in a saucepan and add the red lentils. Stir constantly until the lentils are well coated. Add salt and pepper as well as the chopped shallots and blend in.

Add a tablespoon of Mr Vikki’s North Indian Curry paste or the Hot Goan one for a more fiery treat and stir gently so as to not split the lentils.

Add enough stock to cover the lentils and simmer gently. Once the lentils have absorbed the liquid, add some more stock and repeat the process until all the stock is gone. Serve immediately.

Little tip:
For a more indulgent dish, add a spoonful of crème fraiche, sour cream or natural yoghurt to the dhal just before serving. Note that this dish does not freeze or reheat well as the lentils will turn to mush... |
